Low carb, high protein buffalo chicken dip! Perfect for lunch prep, make as many at once as you like. The dip is only 5 ingredients! I choose not to blend my cottage cheese for these, but if you prefer a smoother texture, blend the cottage cheese until smooth. Use your choice of shredded cheese. Add the amount of buffalo according to how spicy you like.
- 5 oz. canned chicken
- 1/2 cup cottage cheese
- Buffalo to taste (I used probably 3Tbsp.)
- Ranch powder to taste (I used about 1.5tsp.)
- 1/4 cup shredded cheese
- Drain chicken. Blend cottage cheese, if desired
- Add all 5 ingredients listed above to microwave safe container
- Stir to combine
- Microwave apx. 1 min. 30 seconds
- Mix well, serve with protein chips for added protein
