Three ingredients, plus spices, is all you need for the perfect side!

  • 3 squash
  • 3 zucchini
  • 1 medium/large onion
  • salt
  • pepper
  • sugar *sugar is optional, I use about 3xs more salt and pepper than sugar, but the sugar gives a good flavor
  • bacon grease (is the best in my opinion) or a small amount of butter or oil

**You can use more or less of the squash and zucchini, I just think the 3-3-1 ratio works good, and it cooks down quite a bit.

  1. Roughly chop onion, slice squash and zucchini. I leave the skin on, but cook it down to where it is soft, you can remove if you wish
  2. Add bacon grease (or butter/oil) and onions to deep skillet or frying pan, cook 2-3 minutes on medium heat
  3. Start layering squash, zucchini, salt, pepper and a pinch of sugar
  4. Continue layering until pan is full, its okay if everything does not fit yet
  5. Cover with lid, let cook apx. 5 minutes
  6. Remove lid. Careful! It will steam. Let the condensation drip in the pan. Stir to combine all layers
  7. Add any remaining veggies and season
  8. Return lid, continue checking and stirring every 5ish minutes, until veggies begin to soften and change color
  9. Remove lid, there will be a lot of liquid in the bottom of the pan, cook about 5-10 minutes, stirring occasionally, until liquid has decreased by about 3/4, you don’t want too much liquid
  10. Enjoy!

Just a little grease is needed, the veggies have a lot of liquid in them.

My lid would not fit all the way down at first, that’s okay!

Try to cook out most of this extra liquid.
