Three ingredients, plus spices, is all you need for the perfect side!
- 3 squash
- 3 zucchini
- 1 medium/large onion
- salt
- pepper
- sugar *sugar is optional, I use about 3xs more salt and pepper than sugar, but the sugar gives a good flavor
- bacon grease (is the best in my opinion) or a small amount of butter or oil
**You can use more or less of the squash and zucchini, I just think the 3-3-1 ratio works good, and it cooks down quite a bit.
- Roughly chop onion, slice squash and zucchini. I leave the skin on, but cook it down to where it is soft, you can remove if you wish
- Add bacon grease (or butter/oil) and onions to deep skillet or frying pan, cook 2-3 minutes on medium heat
- Start layering squash, zucchini, salt, pepper and a pinch of sugar
- Continue layering until pan is full, its okay if everything does not fit yet
- Cover with lid, let cook apx. 5 minutes
- Remove lid. Careful! It will steam. Let the condensation drip in the pan. Stir to combine all layers
- Add any remaining veggies and season
- Return lid, continue checking and stirring every 5ish minutes, until veggies begin to soften and change color
- Remove lid, there will be a lot of liquid in the bottom of the pan, cook about 5-10 minutes, stirring occasionally, until liquid has decreased by about 3/4, you don’t want too much liquid
- Enjoy!
Just a little grease is needed, the veggies have a lot of liquid in them.
My lid would not fit all the way down at first, that’s okay!
Try to cook out most of this extra liquid.
