Prep Time: 5 Minutes Cook Time: 15 minutes

This is a quick and easy dinner for a night after work or a meal you could prep for lunches for the week! It only takes a few ingredients and minimal cooking time. I tried to make a single serving for my lunch and ended up with enough for 2 lunches. This would easily make lunch for the week using the ingredients I had. The bean sprouts are completely optional, but I enjoy them. However, kale that comes in the super blend bag that I got, I am not a fan of, (any kale, not just from this bag) so while sautéing the veggies I did take most the big pieces of kale out. The chicken can be made in the oven, air fryer or microwave (I’m not sure how it would be texture-wise out of the microwave). Below are all the ingredients that I used.

For a lunch size batch

  • 4-5 chicken nuggets
  • 1/2 cup super blend veggies
  • 2 Tbsp. bean spouts (optional)
  • 4 oz. fettuccine approximately, a little less than 1/4 of the box
  • 3 Tbsp. Subway sweet onion teriyaki sauce
  • few dashes soy sauce (optional, I thought just the teriyaki by it’s self was too sweet)
  • Non stick cooking spray
  1. Cook chicken according to package directions, I did mine in the oven (400 for 15 minutes). This brand has options for air fryer or microwave.
  2. Start a pot of lightly salted water. Once boiling, break noodles in half and add to water. Stir occasionally. Cook to package directions (11-12 minutes or until tender)
  3. While the chicken and noodles are cooking, lightly spray a skillet with the non stick cooking spray. Add veggies and sauté 5-6 minutes on medium heat.
  4. Turn down veggies to low.
  5. Cut chicken into bite sized pieces, add to veggie pan.
  6. Drain noodles and add to skillet with veggies and chicken.
  7. Drizzle with teriyaki and sprinkle with soy sauce. Mix well.
  8. Enjoy!

For a dinner sized batch

  • 12-15 chicken nuggets
  • 1 and 1/2 cup super blend veggies
  • 1/4 cup + 2 Tbsp. bean spouts (optional)
  • 6 oz. fettuccine approximately, apx. 3/4 of the box
  • 1/2 cup + 1 Tbsp. Subway sweet onion teriyaki sauce
  • soy sauce (optional, I thought just the teriyaki by it’s self was too sweet)
  • Non stick cooking spray
